How to Make Mac & Cheese Faster Than The Box

Fast Mac & Cheese Ingredients

  • 200 grams Extra Sharp Cheddar Cheese, Finely Shredded

  • 100 grams Swiss Cheese, Finely Shredded

  • 11 grams Sodium Citrate

  • 265 grams Water

  • 454 grams/1LB Of Dry Pasta

Cheese Sauce Instructions

  1. Add the water and sodium citrate to a sauce pan

  2. Bring the water to a simmer

  3. Add the cheese to the simmering water

  4. Blend with a stick blender until smooth and put aside for later

  5. Follow the instructions on your chosen dry pasta and add the cheese sauce right after draining the pasta

Chef’s Note

You can use the sauce right away or freeze it for later. Makes 4 2x2 inch cheese sauce cubes which is good for 1 LB/454 grams of dry pasta. If you like it extra cheesy you can double up on the sauce. If you leave the cheese sauce cubes frozen till you're ready to make some mac and cheese, then microwave it for about a minute or two while you cook the noodles and then stir the sauce into the cooked noodles after you drain them.
