Lemon & Earl Grey Tea Cake Batter Ingredients

  • 320 grams/6 Eggs

  • 180 grams Flour

  • 150 grams Honey, Acacia Honey If Possible

  • 40 grams Melted Butter

  • 6 grams Baking Soda

  • The Zest Of 2 Or 3 Lemons

  • The Contents Of 1 Satchel Of Earl Grey Tea

Lemon Honey Glaze Ingredients

  • 80 grams Honey

  • 20 grams Lemon Juice

Lemon Honey Glaze

  1. Add the honey and lemon juice to a sauce pan and bring to a boil

  2. Boil until the bubbles grow to about 1 inch round and the glaze has reduced by about 1/3. Then set aside to cool.

Cake Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Brush melted butter into a 6 cup bunt or loaf pan and set it in the refrigerator to cool and butter to solidify

  2. Combine the flour, baking soda, salt, ground nutmeg, and cinnamon in a bowl and set aside for later

  3. Beat the honey and eggs in a metal bowl over a simmering pot of water with a hand mixer until thickened and it reads 110 degrees Fahrenheit. Do not let the mix rise above 113 degrees Fahrenheit. You should be able to draw a ribbon with the thickened batter

  4. Once you can draw a ribbon with the batter add in your melted butter, lemon zest, and earl grey tea but wait to fold it in with the dry mix

  5. Sift the dry ingredients into the wet and gently fold them together until the batter is consistent. Be careful not to knock more than half of the air out of the batter while folding them together

  6. Dust the pan with the extra flour and carefully pour the batter in the pan

  7. Bake at 350 degrees Fahrenheit for about 30 minutes or until a cake tester comes out clean

  8. Turn the cake out onto a rack and let fully cool. Then brush or drizzle the lemon honey glaze over the top
